And those turkeys were always delicious.

How to Make Herb Butter for Roast Turkey
Preheat your oven to 325 degrees F and place the lowest oven rack in the oven.
The rub then starts with fennel, sage, and rosemary, which is my favorite spice combo.
Then add dry mustard, sea salt, freshly ground pepper, chopped garlic, lemon zest, and butter to make it more complex.
Blend everything together well and put it aside.
Then take the turkey out of the package, rinse it under running water, wipe it dry with paper towels, and remove the outer netting with kitchen shears.
Why? Because you’ll dread having to take it out once it’s been cooked. It’s a shambles, believe me. And, sure, the turkey will keep its form while it roasts.
After that, gently oil a roasting rack… You’ll thank me later when it’s time to clean up.
For the same reason, line a baking sheet with foil. Then, on top of the foil-lined pan, set the rack and the turkey.
Next, massage the herb butter mixture all over the turkey roast with ideally clean hands.
Roast the turkey for 2–2 1/2 hours, or until it is nicely browned and a meat thermometer reads 165 degrees.
Remove it from the oven, cover it with foil, and let it aside for 15 minutes before carving. This aids in the penetration of the fluids into the meat.

- 1/2 teaspoon dried fennel
- 1/2 teaspoon dried sage

Preheat the oven to 325°F. Reduce the height of the rack.
Combine fennel, sage, rosemary, dry mustard, sea salt, pepper, chopped garlic, lemon zest, and butter in a small mixing bowl.
Take the turkey out of its package. Using paper towels, wipe dry after rinsing under running water. With kitchen shears, cut away the outside netting.
Place the turkey in an elevated baking pan. All sides should be rubbed with the butter mixture.
Place in the oven for 2- 2 1/2 hours, or until the turkey is browned and a meat thermometer reads 165 degrees.
Remove from oven and set aside for 15 minutes, covered in foil.
Carve the meat and serve.
